yum-muffs
I made these delicious muffins adapted from Glenn's Banana Bread with Chocolate Chips and Candied Ginger recipe. I modified the recipe slightly by using 2 cups of spelt flour instead of all-purpose, and I used 1 Tbs ground flaxseed+3 Tbs water instead of 1 egg. The recipe didn't give a specific measurement for the ginger...I ended up using 3 Tbs.
